Foxtail Millet Onion Rava Dosa

Ingredients Required for Making Foxtail Millet Onion Rava Dosa

Regular dosa batter - To make approximately 10 dosas

Foxtail millet - 3/4 cup

Onion - 2

Green chillies - 4 to 5

Ginger - 1 inch

Pepper - 2 teaspoons, crushed

Cumin - 1 teaspoon

Salt - As required

Gingelly oil - As required

Curry leaves - Few

Instructions

  • Rinse foxtail millet in running water about 2 to 3 times. Strain the water.
  • Dry fry cleansed and filtered foxtail millet in a tawa till they are hot to touch.
  • Once the millet is cooled, grind it in a mixie in rava consistency.
  • Chop onion and ginger and thinly slice green chillies.
  • Add ground foxtail millet, chopped onions, ginger, green chillies, crushed pepper, cumin seeds and curry leaves along with required salt and mix well. The batter should be watery.
  • Place tawa on heat.
  • Add oil to hot tawa and pour the batter on the corners of tawa in a circular motion. Since the batter is watery, it will spread to the center. Just fill the gaps with some batter if necessary. Pour oil around the corners of the batter.
  • When the corners turn crispy, flip the dosa and add oil around the dosa.
  • Remove dosa from tawa once the other side of dosa is done.
